Pas de l’Escalette is a mild and creamy farm cheese manufactured in the Garrigue region. It is made in small quantities by a regional producer and the cheese reveals a range of aromas lightly mixed in a milk-rich taste. It is very lightly washed in the course of its refining; and melts in the mouth under its natural rind. This cheese which is really very original, is an “as we love them” discovery at Xavier’s.
