We are in Rouergue region of southern France, the land of the ewe. This is the birthplace of the Pavé de Paulinet, a smooth, farmer’s cheese that borrows its characteristics from the greats: the shape of this brick resembles a half Pont-l’Evêque, its color resembling a slightly marbled Brie, its texture a creamy Camembert, and its taste, a concentrated ewe’s milk with a hint of freshness.
