What you need to know...

If in the Languedoc region the term Pélardon applies to all small goats’ milk cheeses, this one is nonetheless exceptional.  It is flavoured by the Cevennes pastures and is compact and tender, giving off an aroma blending hazelnuts and milk.  Its fine and discreet rind forms naturally during refining.
