What you need to know...

Persillé des Aravis comes to us from the Massif Alpin, issued from a herd of goats that runs free in the mountains and change altitude depending on the season (the agricultural practice of transhumance).  This cheese in the shape of a “small fourme” is a lightly pressed paste and its tommes are affined, like its counterparts, in natural cellars.  Its crust is necessarily brushed by artisans in order to cover it, bit by bit over the course of its affinage.  Its marbled paste becomes veined with blue according to its whims and the openings in the paste, in order to obtain a vein that is very varied from one tomme to the other.  Its goatlike taste will be discreet, subtle, proof of the herd’s rich natural nourishment.  A rare find that you absolutely have to taste!
