What you need to know...
Persillé de Tignes has a lovely cylindrical form. It is manufactured in the goat pastures of the Savoie region and more particularly in the Tignes hills; it is a rare and rustic quality farm- cheese. It develops considerably according to the refining process: white and compact when young, its interior becomes more dense and generates complex perfumed milk and pasture aromas which gradually assert themselves. The rind becomes brown and crumbly, and when it attains the summit of its character, blue-tinted veinules even appear and are visible. This is an authentic cheese, a noble representative of its region.
