This is a farm cheese manufactured in accordance with a specific and precise technology. Contrary to the typical goats’ milk cheese, it is creamy and homogeneous, its rind well-covered with a white fungus: in texture and rind it brings to mind a very runny camembert, itself something rare for a small-production goats’ milk cheese. As for its taste, this one is decidedly of the goatish type, with very well-developed lactic aromas.
