What you need to know...

Its outer cover comes from “mucors” (a fungus), otherwise known as cats’ fur.  When the cheeses are still young they are placed on straw (in olden times even on the ground), giving them time to develop an organique type taste with plenty of depth.  The tendency to product supple or creamy St Nectaires has more to do with marketing.  What should be preferred is a semi-firm interior with a real black rinding.
