A small jewel chosen with great care, this farmer’s cheese comes to us from the Touraine region and its distinctive feature is a piece of straw that runs lengthwise through its center (whose role is to strengthen and lighten the cheese log). Its texture is fine, firm, and homogenous, and it has a slightly acidic, salty taste that is accented with the flavor of goat- milk.
