Member of the Epoisses Family, it is considered as the little brother. In order to certify its origin, it will is treated just one time in marc de Bourgogne, that way it will preserve a taste with a touch that is very subtle. Most of the times, it is tasted when it is half-refined, as it is when this chesse has on the crust a perfume that is very charming, slightly smoked and powerful. In the meanwhile, the center is kept tender/pale in order to obtain a fresh and milky equilibrium.
