What you need to know...

This is a cousin of the famous Stilton cheese (English Origin Protected Label), and very appreciated with a glass of port.  And yet this Label has a defect!  It only accepts pasteurised cheeses! Thus if you wish to taste the authentic version of this great cheese, with its damp undergrowth and liquorice savours, subtly veined, and melty texture you will have to forget the Label and opt for this real return to its raw -milk sources.  Let’s use this occasion to note that at the time when Europe, led by France, wanted to ban the manufacture of raw-milk cheese, one of the most fervent defenders of our gastronomic patrimony was Prince Charles.
