What you need to know...
Like most traditional Swiss cheeses, this Fribourg gruyère has a very old origin; it is said to have been served to Austrian dukes in 1448. It is firm but flaky, ample and fleshy in the mouth. The cheese is more spicy than nutty, intensifying as it melts.
