From Lombardia, this Italian cheese with its slightly pressed interior, and its slightly washed rind has a welcoming creaminess. If it is surrounded by a melty texture, its method of refining often brings to the fore a heart with a somewhat shortbread sandiness. It has an aromatic character, discreet but nevertheless very present, associating specifically bovine lactic qualities: particularly “changeable” aromas are revealed.
