Taupinée, also called Taupinière, is a round and appealing product. This is a farm cheese manufactured from a very concentrated milk. Its natural rind is ashen coloured by charcoal action, giving it this coarse aspect and velvety to the touch. The cheese is smooth and tender, exactly like its taste … Dominette is its younger version, just slightly smaller.
