What you need to know...
This Tome which comes to us from the High Pyrenees, is produced in Barousse on the banks of the river of the same name. The Castillonaise breed of ewes graze on the nearby mountain , which ensures a rich and aromatic milk . As for the Tomme it is of a small size, 2/3 high in ratio to its circumference, which is only about 15 cm. It has a brushed rind, slightly rough, where the red has a tendency to develop. We always select end-of-spring to beginning-of-summer Tommes which have a firm but melting interior, and a smooth, milky taste.
