What you need to know...

If, at the start, we have the same interior as its small brother Moulis, it is here of a darker hue and sprinkled with dust, promoting a permeable rind for exchanges between the cheese and the prevailing atmosphere.  Thus taste will be stronger and acidity played down, while the aromatic expression will be tinged with “organic” accents.  We can thus sample it at the end of the meal so as to signal the shift from other dishes, with the opportunity provided to enjoy a naturally sweet wine of the Banyuls type, or a chilled white spirit.
